A Barzón is the part of a horse-drawn plow that joins the horse with the plow. The name comes from a Mexican revolutionary song that speaks about injustice in the fields. Their motto is: “Debo, no niego, pago lo justo” (“I owe, I don’t deny it, I’ll pay what is fair”). Cocina Poblana is the cuisine of Puebla in southern Mexico. It is esteemed throughout Mexico but still relatively uncommon in the United States. Mole Poblano – a sauce made with cacao, cinnamon, and dried chilis – is perhaps the most well-known item.
