Each year, the hunt for white Piedmont truffles animates the town of Alba in the Alpine foothills and oak forests of northern Italy. This tartufo bianco d’Alba, a rare delicacy, serves as the inspiration – and premier ingredient – for our modern Italian restaurant. The 3 Michelin star chef Enrico Crippa curated the menus, while Antonino D’Alessio and his culinary team bring each vibrantly colourful dish to life.
