Costas Spiliadis, a young Greek intellectual, leaves his country for North America, where he will pursue university studies. He will establish himself in Montreal, with one inspiration in mind: that of a new approach to psarotavernas, these taverns where fish is cooked simply. The next step in his journey determined what would soon become his life's quest: he opened his first estiatorio Milos and decided to become the champion of Greek cuisine abroad. It was in 1979 that Costas revolutionized the genre, opening the original Milos in the Mile End district of Montreal, of which he was both the chef and owner. It is an innovative restaurant, one of the first to have an open kitchen and a stall where guests are invited to come and choose their fish or seafood. The owner spares no effort to find suppliers who will allow him to to serve the most delicious products from Greece and other popular locations around the world. His meticulously simple preparations are a revelation. The restaurant will be revitalized in 2015, including an expansion and updating. Rated four stars by the Montreal Gazette newspaper in 2008 and 2000; featured as “one of the most famous Greek restaurants in the world” by MIXTE Magazine in 2021.
