The bar is a project of the design studio Old Friend. Adorned with artwork by Elliott Snyder, and curated knickknacks from travels, estate sales, and thrift shops, the interior of Collector holds a refined yet welcoming vibe. "Our hope was to create a place that feels like the extension of a really nice living room with a lot of windows." The team said. "Yes, let's make it feel like an elevated house party with very good drinks." They added. In crafting Collector's cocktail menu, the owners enlisted the help of Ben Skiba, a friend and collaborator. The result is a diverse selection of spirits, including standout concoctions like the Italian Jazz Club, a sun-dried tomato and basil-infused gin martini, and the Buried Luck, a vibrant mix of pisco, rhubarb amaro, passionfruit, and citrus bitters. Collector takes pride in its local roots, showcasing Portland-made liquors, beers, and art.
