Nolan was born in 2016 from our need to make the food we like to eat. Comfort, without geographical restrictions, which does not belong to any category, based on Greece, has influences from everywhere, from the street food of Vietnam or Beijing and the classic fried chicken to your grandmother's beans. Food defined only by the group's appetite for delicious and "welcoming" food, resulting from the love for the ingredients themselves, the feelings and memories they evoke, the search for techniques, tests and experiments
