A micro-brewery serving craft beer in a former butcher's shop offering a trendy brewery, outdoor seating & TV sports viewing.
The Hops & Barley had been the Schultz butcher's shop since 1955. The grandson of the butcher's founder kindly provided us with a few photos. You can also see this on the wall in the smoking room. Unfortunately, after reunification, the new products were often more interesting, so the butcher shop had to close in 1995. After that, the store was empty for a long time. There were reports of artist events and Indy vernissages. In any case, not much was done structurally. And so at the beginning of 2007, we had a lot to do to set up a house brewery. In February 2008 we were then able to open the front guest room, although the smoking room was still a construction site. We were able to inaugurate this in August 2008. The Berlin foals found that very good and that is why the smoking room at Borussia Mönchengladbach games is in black-white-green hands. In 2009 the small Braxonia brewery became a bit too small and we had to expand. The new 5 hl brewing system came from Schwarzenbek near Hamburg and the additional cold storage room for the filled kegs was installed in the cellar. I didn't count exactly, but we've brewed about 70-90 different beers since then and I'm still curious about new hop varieties, different malt compositions, and different fermentation processes.
