LLURITU is a very funny fish with reddish scales and " googly eyes", between 12 and 16 centimeters long. LLURITU, is a fish found in the Balearic Islands, in Almería, and sometimes in the Maresme. In fact it is the raor, lorito, galán, papagayo or pampano. We call him Lluritu (misspelled) because we think he's funny, handsome, Catalan, and charismatic. Its taste and texture are unique: very white meat similar to sole, fatty and lightly iodized. Surely, its most characteristic feature is its gelatinous skin that melts in the mouth as if it were Iberian bacon. They can be grilled or fried with a light batter. They are fished with a hook, one at a time.
