Third owners - since June 2018 - of the restaurant La Poule au Pot, a Parisian institution open for more than 80 years, Élodie and Jean-François Piège have imagined a menu inscribed in the French culinary heritage through the generosity of bourgeois cuisine - emblematic of the French savoir-vivre from the 19th century until the 1950s - which manifests itself in these dishes. A friendly state of mind that is found in the place, refreshed, but left, like one of the characteristics of its dishes, "in its own juice", typical of the 1930s.
