Led by Dominic Bujold, founder of Sushi Shop and LOV vegan restaurants in Canada, it was the trio Marjan Tharin, Nicolas Mercier and Matthieu Okabe who had the idea of setting up BLOOM in Paris after a stay in the Canadian city. Gifted with their own expertise and sensitivity, they first cut their teeth in the world of gastronomy and luxury before joining forces.
