Quintonil – Mexico City, 2012– is the emblem for the gastronomical project headed by Alejandra Flores and Jorge Vallejo. The aim is to express Mexican flavors with a personal touch. Since 2015, Quintonil has been included on The World’s 50 Best Restaurants list. Today is ranked ninth worldwide and forty-third in the Latin America’s 50 Best Restaurants list. Jorge Vallejo opened Quintonil to develop a cuisine that would emphasize Mexican ingredients and traditional techniques to transform them into today’s context. Today, Vallejo concentrates on product and flavor quality by working with regional producers who spark a positive impact on their communities and on the ecosystems where they live. In 2012, opened Quintonil with her husband Jorge Vallejo. Alejandra’s vocation and knowledge focused on the dining room and operations area have made it possible to forge Quintonil’s hospitality-based strategy. This has resulted in effective communication between the kitchen and the dining room, and, of course, a full experience for the restaurant’s guests.
