We've always really wanted to open in Batignolles, because it's a small family village, a bit like the Monti district in Rome. Believe it or not, but making ravioli by hand is quite complicated, it requires a lot of preparation, a lot of talent and a lot of organization. We made a restaurant dedicated to these rock stars of Italy that are the primi piatti . To drink, we put on the menu 30 Italian wines and all the tonics made in the boot.
