Irregardless features two six-course seasonal tasting menus, one omnivore and one vegetarian, are offered alongside two optional beverage pairings, one of which exclusively focuses on Virginia wine and spirits. Irregardless also features an inventive bar program run by Christine Cabatuan in collaboration with Ian and Mika. The Modern American tasting menus draw inspiration from the bounty of the Mid-Atlantic region, with a strong focus on local and sustainable ingredients. Guests can enjoy house-made pastas, well-made breads and simple yet exciting dishes with multiple layers that respect quality ingredients. A concise a la carte menu is also offered at the 12-seat bar on weekends, with a la carte table reservations available on Tuesday-Thursday.
