Hiraya is a project by Chef Paolo Dungca showcasing Progressive Filipino Cuisine. For anyone who wants to take a loved one out for a special treat.
This restaurant tells Chef Paolo’s story of growing up in the Philippines—the food he ate, the family and friends that influenced his journey, and the recipes he learned from his mom, aunts, and grandparents. Additionally, it’s inspired by a trip to the Philippines in 2019 that sparked the idea of cooking Filipino food in a modern yet familiar way. At its essence, Hiraya will be Paolo’s personal reflection and celebration of the beauty, history, and flavors of the Philippines.
