Wild Oats, a fresh take on traditional Texas cuisine. As Underbelly told the story of Houston food through the city’s cultures, people and ingredients, Wild Oats aims to explore the cultures and native ingredients that make Texas the diverse state that it is. A live fire element is central to Wild Oats. From the cattle drives of Bandera to tortillas searing on a comal, everything tastes better with the natural taste of charcoal and wood. The grill, designed by Aaron Franklin and the team at Franklin BBQ Pits, is built to have the ability to move certain elements around to utilize different stages of the wood burning.
