Bar Vlaha is home to the food and culture of the largest group of nomads in Greece, the Vlachs. These Shepherds laid the foundation of Greek cooking, moved around and planted their roots wherever they landed, bringing with them their food and traditions. Our inspiration comes from the nomadic regions and villages of Greece. Homemade cooking sourced locally, the menu will focus on fresh pies, spreads, and baked breads. Center stage is a heavy focus on grilling or spit-roasted meats, and a braising method done by the nomadic Greeks cooking in clay pots known as ,gastra’ over charcoal. Vlach cuisine uses techniques of fermenting, braising, grilling and pickling, which originated from their foraging, shepherding nature.
