Welcome to the latest restaurant from Michelin Star Chef Morihiro Onodera. Combining traditional Japanese food with locally and organically sourced ingredients, Mori would like to introduce you to the finest of Japanese traditional food.
One of chef Mori’s favorite sake to pair with his menu. This sake is a perfect example of Niigata-style (clean and dry) sake with a deep balanced flavor. Yamada Nishiki rice is polished all the way down to 35% bringing out a great ginjo flavor profile of flowers and light fruits while retaining a deep umami backbone. The name “Milky Way” refers to the complexity of this sake comparing its complexity to all the stars in the sky. This sake makes it a great pairing with the chef’s menu as the flavors will evolve and change each course.
