SU 素 translates literally to “vegan” or “vegetarian” in Chinese. But su also means simple, quiet and plainly unadorned, the elemental nature or essence of something greater. RONG 融 means to blend or meld. It’s a warming word, one that implies harmony and unity. At the heart of SURONG is good food that blends the chef’s Chinese heritage and lived experiences, in a way that stays true to tradition but evolves according to season. It’s elegant and thoughtful, food presented in a warm, healing context. We source our ingredients from local purveyors here in the Pacific Northwest, as well as imported from Taiwan. We get our tofu from Ota Tofu, the oldest tofu-maker in the country, conveniently located a few blocks down in Portland, and carefully ferment ingredients like mustard greens, chiles, and condiments in small-batches for use in our tasting menus.
