Bolero is a Post-Colonial Vietnamese restaurant that dives into all things Việt Nam: music, food, history, and architecture. The restaurant is named after the most popular form of dance back in 1950s Sài Gòn. Chef Matt Le-Khac applies the techniques he learned from Blue Hill Stonebarns and the Finch to the Vietnamese story. And lets the seasonal produce of the northeast corridor to guide the menu as well as the rarer Vietnamese herbs & produce coming from his family farm. A backyard tea garden and indoor dining room carry hidden treasures of Vietnamese culture inviting guests to explore the richness of our culture.
