Crudo e Nudo is an Italian-inflected seafood restaurant & market from Chef Brian Bornemann (Michael's Santa Monica, Viale dei Romani, The Tasting Kitchen) and interdisciplinary artist Leena Culhane that graduated from its roots as a pandemic pop-up to brick & mortar in April 2021, debuting on Santa Monica's lively Main Street. Bornemann & Culhane oversee the daily operations at Crudo e Nudo in tandem, with Bornemann helming the culinary & biodynamic wine program and Culhane running point on front-of-house, design, & community outreach programs. The raw bar & market provides an approachable & safe experience for people to access the freshest ingredients from Los Angeles farmers markets & fisheries, while aiming for minimal waste and, ultimately, zero plastic as a certified Green Business. Bornenmann's menu features the best west and east coast oysters, crudo and sashimi-style preparations, as well as street-food inspired take-away options like the tuna tartare toast with shiro shoyu, shrimp essence, and black sesame. The lineup will also present plates that rotate with the micro-seasons of Southern California. Culhane runs Lenny's, a minimal but killer biodynamic coffee shop in the morning, with a portion of proceeds benefitting non-profits she loves.
