Your stomach’s going to growl even as your eyeballs pixelate and fixate on over 40 years of accumulated memorabilia forming a multilayered collage that comprises the decor. Polaroids paper the walls; a pressed-tin ceiling ricochets warm laughter and conversation around the space. When it opened in 1980 the Tavern instantly became a locals’ joint—a watering hole for the residents of Woody Creek. A few miles to the east, Aspen is diving into the future, while the Tavern is content to be down-home and casually comfortable.
