John opened Hathorne after honing his experience over three decades in the Nashville hospitality community. He started his careers in the kitchens at Nashville mainstays Amerigo and Corner Market, where he was an early adopter of local and seasonal ingredients. He’s perhaps best known for his time at Fido, where he ran the kitchen for 12 years and raised the bar for the menus people could expect from a coffee shop. From there, he brought the level of service and guest experience to focus as general manager. He developed a passion for finding the best way to offer quality food, drink, and hospitality, and as his career progressed, he became more interested in the ability to do both of those things on his own terms. When he found the building where Hathorne resides – a former church fellowship hall – it all came into focus. His transition out of the kitchen and into a supervisory role was the ideal next step for John, allowing him to bring his dream concept to life and marry his values for a restaurant that values the guest. He has a calling to find and support incredible young chefs and talent in a way that others have supported him in past.
