After departing from British Airways (no pun intended), he opened up Pasta Cucina in 1992. The restaurant was located in the historic Bellevue Hotel in Center City Philadelphia. Pasta Cucina flourished there for a decade before being sold. After selling Pasta Cucina, Steve Martorano, of the famed Café Martorano’s, heard of Chef Joey’s talent and made Joey an offer he couldn’t refuse. So, Chef Joey packed up and moved to Florida where he became one of Steve Martorano’s most valued Executive Chefs. He worked with Steve side by side for 6 years at Café Martorano Restaurant in the Hard Rock Hotel & Casino in Hollywood, Florida.
