THE CHALLENGE Given the brand’s buzz-generating success with iHob — a name change to emphasize the chain’s new selection of burgers — iHop sought to take over yet another culinary staple, the pizza. THE SOLUTION February 9th is New York’s second Christmas, National Pizza Day. This year, iHop hijacked the holiday by introducing their version of the beloved pie, The Pancizza - pizza-sized pancake. In the heart of NYC’s Little Italy, iHop popped up its Pancizzeria where they served fresh, hand tossed, fluffy pies including Strawberr-oni, Mallo-rita, and PancizzAloha varieties.
