Behind Clarence is the French founder and mastermind Olivier Elzer. With some of the world’s greatest chefs such as Joel Robuchon, Jean Yves Leranguer, and Pierre Gagnaire as his mentors, Elzer developed a strong foundation in traditional French cuisine.
