A tribute to Cuba and it’s cultural influences. Calle Dragones, already a success in Bogotá and Cartagena (Colombia), resembles the street in Havana that bears it’s name and collides with Calle Zanja, dividing the Chinese neighborhood from the rest of Havana. Originally invented by Chinese migrants brought to Cuba as laborers in the 1850’s, Asian-Latin cuisine blended Chinese and Caribbean ingredients and cooking techniques. The Cuban Revolution in 1959, however, got in the way and deprived the world to meet what was meant to be today’s Cuban cuisine. Many left the island and concentrated in Miami and New York. Havana’s Chinatown is still one of the oldest and largest in the Americas.
