Situated in the richly storied walls of a beautifully restored national monument, guests of Salsify can expect a simple but expertly crafted menu paired with a hand-picked wine selection. Salsify occupies the upper level at the historically significant building, The Roundhouse. The building dates back to 1786 when it served first as a guardhouse and then as a hunting lodge for the 19th-century Governor of the Cape, Sir Lord Charles Somerset. As the elegant interiors write the next chapter of this national monument, chef Ryan’s delightful dishes test the boundaries between daring flavour combinations and a perfectly balanced plate of food.
