Still Austin Whiskey

We founded Still Austin with a sense of double vision—one eye looking to the future, and the other to the past. We look to the past to honor the traditions of grain-to-glass distilling: from our use of 100% Texas-grown grains, to the spirits aging in our Hill Country rickhouse, to our use of an ancient French barrel-oxygenation technique called Slow-Water Reduction, to our 42-foot Scottish still (lovingly dubbed “Nancy.”) But we also look to the future—and we do that by celebrating what we call a “New Mythology” of our home city. You can find representatives of this mythology on each of our bottles. These are the people we admire, the archetypes of our world: the musicians, the visionaries, the lovers, the scientists, the oddballs, the artists, the everyday dreamers.
